Our Red 2006
Cepage : Cabernet Sauvignon,
Syrah and Merlot
A similar wine as the 05 but with a longer maceration on the
skins giving a slightly darker colour with a clean honest nose,
with all the nuances of fruit flavours and a rounded taste with
tannins that are delicate without being aggressive. Ideal with
red meats and game. Open 1 hour in advance. Serve at 15º -
18º.

Our Rose 2007
Cepage : Cinsault
This delicious, light coloured rosé is made using Cinsault
grapes which are harvested in the cool of the early morning and
only allowed a short maceration on the skins after crushing,
which gives its light colour. Cool-fermented and bottled early to
capture all the fresh summer-fruit flavours. A delicious
apéritif or a versatile accompaniment to any meal. Serve
chilled.
The Winery
In 2006 we took the decision that a
winery would be the next logical step for the advancement of the
domaine and would allow us to complement the organic work that we
were doing in the vineyard. Creating a winery is no small task
and made all the more difficult by the fact that we would have to
construct a building as there was no existing one of sufficient
size. As with all things (but especially in France) it takes a
long time to get all the right stamps and signatures on the right
forms before any work can start, so in 2008 work commenced with
clearing the area for the footings. The structure was finished in
late summer 2008 and it consisted of a ground floor with two
rooms that would be the winery and a work shop and a 1st floor
which would be used as a bottling room and for storage. Because
of our green outlook we have tried to use green methods in the
winery. We recycle rain water to wash the equipment and we will
have a bamboo filtration system for all the waste water and a
Canadian well to regulate the internal temperature for the
storage area.
At
the moment we are in the process of buying all the equipment that
is needed - fermenting tanks, de-stalker, press,
pumps…etc. We will be using a horizontal screw press for
our rose and a traditional vertical screw press for the red after
which we will be fermenting in fibre tanks and ageing some small
quantities of our reds in oak barrels. We will also be making a
Cartagene which is a sweet fruity wine, very good as an
aperitif.
